Chocolate is a demanding material: temperature, moisture and timing decide whether a bar is glossy or dull. That is what makes a chocolate workshop an effective team exercise. Participants work in small teams to temper chocolate, fill moulds, prepare a simple ganache and finish their pieces with decoration.
The session is led by a trained chocolatier, who explains the principles of tempering and flavour pairing. Recipes are adapted to the group. Allergens such as nuts, milk or gluten should be declared at booking, as several ingredients are used in shared work areas.
