The macaron is one of the most precise pastries in French patisserie, and that precision makes it a good team exercise. In a pastry studio in Paris, participants work in pairs or small teams to whip a meringue, pipe shells of equal size, rest and bake them, then fill them with a ganache or praline. Timing, measurements and cooperation matter at every step.

The session is run by a professional pastry chef, with the recipe prepared in advance so that the time is spent cooking rather than on administration. Most macarons contain almonds, so allergies must be declared before booking.

Objectives

  • Practise precision, timing and step-by-step discipline
  • Create a shared result that the whole team can taste
  • Introduce a classic French pastry technique
  • Build cooperation between colleagues in a relaxed setting
